CRANBERRY ALMOND ENERGY BITES

Naturally sweetened and so easy to make, no bake Cranberry Almond Energy Bites are a healthy, wholesome treat perfect for snacking or dessert!

These no-bake Cranberry Almond Energy Bites (aka, energy balls) are a favorite around our home and welcome treat for my sweet tooth!

They are simple to make, gluten free, refined sugar free and contain no unwanted additives. Plus, there’s no baking time – just a little chilling!

These healthy balls of goodness are full of AMAZING flavor and perfect any time of day or season. But be warned, they are pretty addicting and you will be eating many!

Bring them along for parties, or give them as gifts, or just make them to have around the house for a guilt free sweet. They will do wonders for your palate and hit that sweet spot perfectly!

Ingredients You’ll Need

In the recipe, nuts, hemp hearts, oats and spices and natural sweetener are blended into a thick dough and rolled into balls for a healthy snack or dessert.

Here is everything you will need, plus ingredient substitution ideas:

  • almonds – sub with cashews for a mild flavor, or pecans or walnuts for boldness
  • rolled oats
  • cranberries – dried (unsweetened pref.) or fresh chopped
  • coconut – shredded or large flakes
  • pure maple syrup – sub with medjool dates
  • vanilla
  • mineral salt

Just simple wholesome ingredients to keep your mind, body and spirit strong!

How To Make Cranberry Almond Energy Bites

  • Make the dough. Add the almonds, oats, coconut, cranberries, vanilla, salt and pure maple syrup to the bowl of a food processor and blend until well combined, stopping to scrape down the sides as needed. Mixture should stick together when pinched.
  • Chill the dough. Place the mixture in the refrigerator for 20 minutes to chill. This will help for rolling.

  • Scoop and roll. Using a 1 tablespoon measuring spoon, scoop up rounded mounds of and roll into 1 inch balls.

  • Add a finishing touch. For a more finished look and to keep the dough from being sticky when eating, roll the energy bites in shredded coconut or almond flour.

Top Tips

  • Keep your hands clean. This mixture is somewhat loose and needs to be packed well when rolling. Keeping your hands clean will help greatly in the process. Be sure to rinse your hands after every few balls, leaving a little moisture on your hands.
  • Uniformity. Keep the mounds uniform in size by using a scooper like this 1 tablespoon measuring spoon (affiliate link), it’s super helpful and makes things easier!
  • Add a little chocolate. Try adding 1/4 cup of mini dark chocolate chips or cacao nibs for a nice change of pace.

How To Store

  • Refrigerator: Leftovers can be stored in the refrigerator for up to 1 week.
  • Freezer: For longer storage, energy balls will keep in the freezer for up to 2 – 3 months. To freeze, place the balls on a baking sheet or plate, about 1 inch apart, place in the freezer for a few hours (this will help them not stick together). Once frozen you can store them in freezer safe ziplock bags or containers. Let thaw in the refrigerator a few hours before snacking.

Ingredients

  • 1 cup raw almonds
  • 1 cup dried cranberries
  • 1 cup old fashioned oats
  • 1/2 cup shredded coconut
  • 1/2 cup pure maple syrup or 1 cup pitted medjool dates (11 – 12), chopped
  • 1 teaspoon vanilla
  • pinch of salt

Instructions

Blend: Add ingredients to the bowl of a food processor and blend until mixed well and crumbly, stopping to scrape down the sides as needed.

Chill: Place the mixture in the refrigerator for about 20 minutes to let it stiffen up a bit.

Scoop and roll: Using a 1 tablespoon measuring spoon, scoop up rounded mounds of and roll into 1 inch balls.

Add finishing touch. For a more finished look and to keep the dough from sticking to your fingers, roll the energy bites in shredded coconut or almond flour.

Makes about 20 energy bites

Store: Keep stored in an airtight container in the refrigerator for up to two weeks. To keep longer, store in the freezer for up to 2 – 3 months. Let thaw before eating.

Notes

Adding 1/4 cup of mini dark chocolate chips or cacao nibs would also be great in this recipe.

Fresh chopped cranberries are my favorite in this recipe. They add a nice light tartness that blends well with the spices and dates. If using fresh cranberries, eat within 7 days.
