Vegan Sausage with Peppers & Potatoes requires only 5 ingredients, is easy to make, and is incredibly simple and delicious!

I love easy meals, and this classic simple recipe using vegan sausage, colored bell peppers, and onion is perfect any time of year. For a plant-based meal, this recipe covers all the bases and is nutritionally complete.

And this is where I come in to tell you how delicious it was, seriously! I was honestly surprised at how flavorful it was without using herbs or spices. It’s super simple with just mineral salt and fresh cracked pepper.

It’s a tasty combination and I think you’re going to love it too!

Ingredients You’ll Need

In this recipe, potatoes, sausage, bell peppers, and onion are cooked until tender and seasoned with salt and pepper for a simple yet flavorful, vegan main dish.

Here is everything you will need:

  • Baby potatoes – Use red or gold.
  • Bell pepper – Any color will do.
  • Onion – Use white or brown.
  • Vegan sausage – I’ve only used and recommended Tofurkey and Field Roast for stovetop cooking.
  • Salt + pepper – This is the only seasoning so use as much as you like.

How To Make Sausage, Peppers & Potatoes

  1. In a large pan, heat oil over medium. Add onions, potatoes and vegan sausage, cook uncovered for 20 minutes, stirring occasionally, will be ready when potatoes are just fork tender. Cook your potatoes a little longer if needed.
  2. Add bell peppers and cook another 10 minutes, stirring occasionally, just until al dente. Remove from heat; at this point, if your potatoes aren’t quite tender enough for you, cover with the lid and let steam a bit. Season with salt & pepper.

I would be happy to eat this easy vegan meal at any picnic, potluck, or other type of gathering. This is one of those meals that can be served any time of the year no matter what the occasion.

Top Tips

  • I like my veggies more al dente, even the potatoes, but you can add a little extra time at the end to soften them to your liking.
  • The smaller you cut the potatoes, the faster they will cook. I cut mine into 1/2 pieces.
  • For variation, poblanos or Anaheim chilis in place of the sweet peppers would be delicious.
  • The vegan sausage I used was Tofurky, but Field Roast is also fantastic. I just used what was available at the time of putting this sausage, peppers and potatoes recipe together.

Serving Suggestions

We love serving this sausage, potato, and peppers with fresh grilled corn on the cob and a cool refreshing House Salad on the side.

It would also be great with a side of these delicious Healthy Baked Beans, Vegan Potato Salad or Classic Vegan Coleslaw, making a terrific well-balanced lunch or dinner.

Ingredients

Scale
  • 1 glug olive oil (about 23 tablespoons)
  • 1 medium onion (white, brown or red), thinly sliced
  • 1 3/4 lbs. baby potatoes (red or gold), quartered or diced into 1/2 inch cubes
  • 1 package (14 oz.) kielbasa sausage, sliced (I used Tofurkey)
  • 2 bell peppers (1 red & 1 green)
  • mineral salt + pepper, to taste

Instructions

In a large pan, heat oil over medium heat, add the onions, potatoes and kielbasa, and cook uncovered for 20 minutes, stirring occasionally.

Add bell peppers and cook another 10 – 15 minutes, stirring occasionally, just until al dente or cook a little longer if you prefer everything softer.

Remove from heat, at this point if your potatoes aren’t quite tender enough for you, cover with the lid and let steam a bit. Season with plenty of salt & pepper.

Serve with grilled corn on the cob and a fresh House Salad. It would also be great with these Baked Beans, Vegan Potato Salad or Classic Vegan Coleslaw, making a terrific, well-balanced lunch or dinner!

Notes

I like to keep my my veggies more al dente, even the potatoes, but you can add a little extra time at the end to soften to your liking.

The smaller you cut the potatoes, the faster they will cook. I cut mine into 1/2 pieces.

Try using poblanos or Anaheim chilis in place of bell peppers.

Use your favorite potatoes, just be sure cut them into 1/2 inch cubes.

  2. Super easy, delicious recipe. Thanks to a pack of precut pepper strips, all I had to do was slice the Tofurky kielbasa and I seasoned and roasted some potatoes in my air fryer. Love it! This will be a staple in our rotation!






  3. Just made this for dinner last night. It was surprisingly flavourful. Great as a leftover for work too~!
